The vines are meticulously tended in the quest for perfection; including a green harvest at verasion reducing the yield to 1 tonne per acre in order to truly represent our vineyard terroir. The cool nights and warm days of the Pyrenees provide the ideal conditions to allow slow ripening of the fruit. This wine represents the epitome of the Estate’s quality in terms of both vineyard and winemaking. It has structure and finesse along with drive and concentration and is the true essence of Taltarni Vineyards.

Our Reserve Shiraz Cabernet is a meticulously crafted great Australian red blend. This wine is the pinnacle of the Taltarni portfolio. The start of the 2019 growing season was quite cool and very little rain fell producing ideal conditions for red varietals to fully mature in the Pyrenees. The Shiraz and Cabernet fruit was harvested from some of our oldest vines on the property, which produces fruit with ripe and intense flavours. Low yields are maintained throughout the growing season to increase concentration and to showcase vineyard site specific characteristics

Taltarni’s estate-grown reds are renowned as some of Australia’s longest lived and most cellar-worthy. An ideal growing season produced high-quality fruit within the region. With an early onset of summer, the fruit quickly ripened and developed full and intense flavours. Premium estate shiraz parcels were harvested at site-specific times across five weeks, allowing for true varietal and regional expression. Fermented in small batches, these parcels were kept separate throughout the winery process to maximise each parcel’s uniqueness. The partial whole bunch ferments were submerged, adding to the richness and complexity as well as quickly developing into a silky and balanced wine

Taltarni’s estate-grown reds are renowned as some of Australia’s longest lived and most cellar-worthy. 2017 was an ideal growing season in the Pryenees for full flavoured, cool climate red wines. An early onset of spring saw the vineyard came back into life and producing fruit earlier in the year. With limited rain fall through-out the season, the vines produced fruit rich in concentration and full of flavour. Whole berry ferments were destemmed and not crushed into small open-top fermenters to minimise any mechanical impact. This technique has resulted in a finely balanced wine that is driven by its varietal flavours and natural structure. The parcels were co-inoculated for alcoholic and malolactic fermentation. It took ten days on skins to extract the perfect balance of structure and aromatics prior to pressing.

The Taltarni ‘dynamic’ range of wines represents the style, taste and artistic expression of our winemakers. The ancient Cambrian earth is the iconic red soil that the vineyards of Heathcote are established on. This soil is widely regarded as the reason for the region’s unique Shiraz with distinctive fruit aromas and choc-mocha flavours. Sourced from a single vineyard, the grapes were harvested in the cool of the early morning and placed into open-top fermenters where they were allowed to cold soak to maximise the flavour extraction. With fermentation starting naturally, the grapes were submerged under the wine with French oak planks. This was done to optimize the natural flavours of the grapes while extracting elegant, soft tannin. Once pressed, the wine was placed into a range of aged French oak barrels to further enrich & develop.
