Opening with fresh aromas of raspberry, red plum, and a hint of vanilla, this wine is beautifully balanced with bright acidity and silky, velvety texture. Vibrant flavors of cherry, pomegranate, sweet tobacco, and chocolate truffle are followed by a long, smooth finish.

Both the Cabernet Sauvignon and Cabernet Franc were grown in the finest blocks of the vintage in Hirondelle Estate vineyard, blocks B5B and A5 respectively. The wine exudes a strong briary aroma with mint chocolate and cedar notes. With a complex flavor profile including blueberry, blackberry and cream notes, the tannins are persistent on the palate without being overpowering.

The 2019 Yettalil opens with aromas of fresh blackberry, ripe plum, and racy cassis layered with hints of violet, bay leaf, and thyme. Beautifully balanced and elegant on the palate, vibrant acidity and polished tannins give way to a concentrated core of black cherry, vanilla, and cedar. The texture is velvety and plush with a backbone of graphite and dark chocolate that lingers through a long finish.

It is reputed that Mr Fuggle of Brenchley in Kent originally selected this variety as a seedling in 1861. Fuggle was the dominant hop variety in England for over 70 years until the development of high-alpha varieties made it less economical for bittering purposes. The delicate, minty, grassy, slightly floral aroma produces a clean, refreshing, full-bodied flavour present in many traditional ales. Often complimented by an addition of Golding to give the rounded, full- bodied flavour for which English Ales have became world-famous. Goldings has been grown in England for over 100 years and, as with Fuggles, were named after the grower who developed them. The variety includes clones that differ in maturity and it is therefore possible to spread picking over the whole of the harvest period. These clones include Early Bird, Cobbs, Eastwell, Canterbury Whitebine, and Mathon. A traditional English aroma variety highly valued for its smooth, sweet, delicate, slightly spicy aroma. Marcial acorn-fed Iberian chorizo is made with minced chunks of lean pork with natural raw materials: salt, paprika, oregano and garlic, which is then stuffed into natural intestine. After a curing period of no less than 3 months, it is perfect for tasting, either on a plate or in a sandwich.

Aroma, unctuousness, an incomparable flavour… it is ham, an icon of Spanish cuisine, highly-prized the world over. Obtained from the back legs of the Iberian pig, Marcial acorn-fed ham is cured for anything between 24 and 48 months. The production method is completely traditional and the ham is cured in our natural drying rooms in Guijuelo. An unhurried, manual process, in the cold, dry mountain air. When cut, its colour varies between intense and dark red, with a particular feature being the extensive fat marbling which gives Marcial Castro ham its characteristic flavour and unctuousness.
